Ingredients
  

  • 1 cup 200g non-fat Greek yogurt
  • 1 scoop vanilla protein powder
  • 1 –2 tsp matcha powder
  • 1 tbsp maple syrup optional
  • Pinch of salt
  • Berries and extra matcha to top

Method
 

  1. Sift the matcha into a bowl to remove any lumps.
  2. Add the Greek yogurt, protein powder, maple syrup, and a pinch of salt.
  3. Whisk hard for 1–2 minutes until thick, fluffy, and completely smooth.
  4. Taste and adjust — more matcha for a stronger green-tea punch, more syrup
  5. for sweetness.
  6. Spoon into a glass or jar. For a firmer, mousse-like texture, chill for
  7. about 30 minutes.
  8. Top with fresh berries and a light dusting of matcha. Serve cold.

Notes

Sifting the matcha is the key to a silky, lump-free mousse — don't skip it.
Swap the maple syrup for a zero-calorie sweetener to lower the carbs. Use a
protein powder you genuinely like the taste of, since it carries the flavor.
Meal-prep: make 2–3 jars at once; they keep in the fridge for 3–4 days.
